Make your Own Taco Filling
Ditch the taco seasoning packet for this easy, versatile Make-Your-Own recipe where you get to control the ingredients and spice level. Flexible to prepare with ground meat or for meatless nights, sweet potatoes & black beans or tempeh. Great for tacos, burritos, taco salad and nachos. Ingredients
- 2 tsp. chili powder
- 3/4 tsp. each ground cumin and kosher salt
- 1/2 tsp. dried oregano
- 1/4 tsp. each garlic powder and onion powder
- 1/8 to 1/4 tsp. cayenne
- 2 Tbsp. vegetable or olive oil
- 3 Tbsp. Take Root Organics™ Tomato Paste
- 3/4 cup water
- 1 medium sweet potato (about 10 oz.), peeled and diced into 1/2-inch pieces
- 1 can (15 oz.) black beans, rinsed and drained

- Mix chili powder, cumin, salt, oregano, garlic powder, onion powder and cayenne together in a small bowl.
- Heat oil in a large skillet over medium heat. Add tomato paste and spice mixture; cook 1 minute, stirring constantly, until paste has darkened in color. Add water; stir until smooth.
- Add sweet potato and black beans; cover and cook 5 to 8 minutes until sweet potatoes are fork-tender, stirring half way through.
VARIATIONS: Prepare recipe as directed, except:
For ground meat tacos, cook 1 lb. lean ground beef, turkey or chicken in 1 Tbsp. oil over medium heat about 5 minutes until no longer pink, breaking it up into bite-sized pieces with a wooden spoon. Add tomato paste and spice mix; cook and stir about 1 minute until tomato paste darkens in color. Add water and stir until coated. Cover and simmer 5 minutes, stirring half way through.
For tempeh tacos, substitute 1 lb. tempeh for sweet potato and black beans. Crumble tempeh into 1/2-inch pieces. Cover and cook 5 minutes, stirring halfway through.
TIP:
To freeze extra paste, spoon from can onto plastic wrap. Fold wrap over paste and form into a log; twist ends and freeze. To use frozen paste, simply unwrap and slice off desired amount. Rewrap and freeze any remaining paste. To enrich the flavor of your favorite dishes, add 1 to 2 Tbsp. of tomato paste to soups, stews, chili, meatloaf, BBQ sauce, macaroni and cheese, slow cooker dishes, sauces, baked beans and more.
